Hall.  No special occasion? Come visit our own “Sweet Colleen Bakery and Tea Room” in the
“Keltic Gael” Restaurant.

My name is Rosemary Gouger. I was adopted from Hope Cottage right here in Dallas. My
blood name was Melinda Jackson. I am a direct descendant of both Andrew Jackson and
Sam Houston. That makes me both an Ulster-Scot and Clan Donald of the Isle of Skye. I
am also part of the Wichita Native American family. I have been a Chef and Caterer for
almost thirty years working here in Texas and in England. I began my career with Double
Tree Hotels, the Texas Chef’s Assoc. Apprenticeship Program and I have worked in
almost every aspect of food service including the Director of Catering for Austin College
in Sherman, TX.  My fortes are in Heritage Weddings and English Tea’s. My husband,
John Sanders is an Irish American Celtic Historian. Our daughter, Summer (for whom the
“Sweet Colleen” is named) is a Baker in Highland Park.
I have been working on this concept for many years. I have a team in place and we are
ready to make this dream a reality!
Please enjoy reading about this wonderful business/ cultural concept. We really need
your input, advice, and help! This is far too big to do alone. “It takes a Village to raise a
child” (Old Celtic proverb).

With access to five major hotels, fifteen minutes from DFW Airport, less to Love Field,
just down the road from Down Town Dallas.
We are all about customs, our customs, your customs, and ancient customs. What they
are still today, what they have become, and sometimes brand new customs to create!
“Something old, something new, something borrowed something blue?” These are
some of the customs we still share today. But, do you know where these customs came
from? We do!
